Insulation of walls in timber cottage - advice requested

I'm looking for advice on insulation: Two external walls of our 1800 cottage are timber framed with timber weatherboarding on the outside. I have taken 1960s/70s plasterboard off the internal walls, in order to replace with lath and lime plaster. The cavities are currently not insulated.
The question is, before I fix the new laths, what should I insulate the cavity with, between the frame timbers? And do I need to make sure there is a gap between the insulation and the external weatherboard for air to circulate? And for that matter should there also be a decent gap between the insulation and the laths so that the plaster can get properly behind the laths to "grip"?

If it were mine I would put egg cartons flat against the back of the weatherboarding, nothing is needed though but a layer of breather membrane would be nice (old newspaper or cardboard). Then fill the remaining gap with insulation and add some bore over the studs, then vapour barrier/air barrier then linings.
leave no gaps or cracks go for as much insulation value as you can.
